The rules most likely to catch out a bakery

Allergen information & labelling

Under the EU Food Information for Consumers Regulation (and SI 489/2014), the 14 major allergens must be declared — including accurate allergen information for unpackaged and food sold loose.

Food safety & inspections

Food businesses are inspected by Environmental Health Officers (HSE) on behalf of the FSAI, usually unannounced. Serious breaches can bring closure or prohibition orders.
